Ingredients:
Tuna
- Sushi Tuna (4 oz portion)
- Black Pepper to coat
- Sesame Seeds to coat
Citrus Teriyaki Glaze
- Lime Juice (1 oz)
- Kikoman Teriyaki Sauce (6 oz)
Wasabi Aioli
- Wasabi Paste (3 tbsp)
- Lemon Juice (¼ cup)
- Honey (1 tbsp)
- Mayonnaise (1 ½ cup)
- Cayenne (¼ tsp)
To Plate
- Tuna – cut into 8 pieces
- Tortilla chips or fried wontons – 8 each

Tuna
- Coat tuna with pepper and sesame seeds and pack it on so it will not come off in pan.
- Heat a cast iron pan with 1oz of oil.
- Sear each side for about one minute until every side is seared golden brown.
- Remove from heat and chill quickly.
Citrus Teriyaki Glaze
- Combine ingredients and mix well.
Wasabi Aioli
- Combine wasabi, lemon juice and honey.
- Blend until smooth with no lumps.
- Add remaining ingredients and mix well.
To Plate
- Top each tortilla chip or wonton with 1 slice of tuna and sprinkle with pickled ginger.
- Drizzle citrus glaze and aioli over wontons.
