Recipe Summary: This incredible Pecan Chicken will take 20 minutes to prepare, and 15 to cook.
Ingredients:
Breading:
- Pecans 1 ½ cup
- Cumin ¾ tsp
- Salt 1 1/3 tsp
- Black Pepper 1/3 tsp
- Smoked Paprika ¾ tsp
- Panko Bread Crumbs ½ cup
- Parsley, chopped 2 tbsp
BBQ Slaw:
- Shredded cabbage 8 oz
- Shredded carrots 2 ½ oz
- Shredded onions 2 ½ oz
- Mayo ¼ cup
- Sugar 2 tsp
- Kosher salt ½ tsp
- White vinegar 2 tsp
- Pepper ¼ tsp
- Bbq sauce 2 tbsp
- Cider vinegar 2 tsp
- Chopped parsley 1 1/4 tbsp
Mustard Sauce:
- Yellow mustard ½ cup
- Honey ¼ cup
- Cider vinegar 2 tbsp
- Ketchup 1 tbsp
- Tabasco ½ tsp
- Brown sugar 1 tbsp
- Worcestershire Sauce 1 tsp
- Chicken Breast 2 lb
**Reserve half of sauce for garnish on plate.
Directions:
Breading:
- Place pecans, salt, cumin, paprika and pepper in blender.
- Pulse to medium chop.
- Transfer to a mixing bowl.
- Add breadcrumbs and pulse to medium chop.
- Combine all ingredients into mixing bowl and add parsley.
- Mix well.
BBQ Slaw:
- Cut cabbage, carrots and onions.
- Place in mixing bowl. Mix well.
- In another bowl, combine mayo, sugar, salt, pepper, vinegars and bbq sauce.
- Mix well.
- Add vegetables and parsley and toss well.
Mustard:
- Combine ingredients in a mixing bowl.
- Mix well.
- Add chicken and evenly coat with sauce.
- Individually bread each breast making sure there is crust on both sides.
To Plate:
- Pan sear chicken golden brown and cook until you reach an internal temperature of 165 for 15 seconds.
- Serve with slaw and favorite starch.
- Drizzle with mustard sauce
